Instructions

  1. In a large skillet, cook bacon until crisp.
  2. Remove and drain on paper towels, then crumble and set aside.
  3. Brown potatoes and chopped onion in bacon drippings.
  4. Drain off excess fat.
  5. Add beaten eggs, salt, and pepper to the skillet.
  6. Cook slowly, stirring until eggs are almost done.
  7. Sprinkle grated Cheddar cheese over the top.
  8. Cover with a lid and warm until the cheese melts.
  9. Serve hot with toast and jelly.
