Ingredients

  • 1 cup chopped onion
  • 1/2 tablespoon light margarine
  • 2 medium potatoes, peeled and diced
  • 4 cups water
  • 1 (12 oz.) can evaporated skim milk
  • 1 (16 1/2 oz.) can cream-style corn
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons chicken bouillon granules

Instructions

  1. In a nonstick skillet, sauté onion in light margarine until tender and transparent.
  2. In a soup pot, cook potatoes in 4 cups water until done; do not drain.
  3. Add the sautéed onion and all remaining ingredients to the pot.
  4. Cook over low to medium heat for 25 to 30 minutes, stirring occasionally.
  5. For an even richer flavor, refrigerate overnight before serving.
