- Melt butter in a saucepan over low heat, then add finely chopped celery and chopped onion; cook until transparent.
- Remove from heat and stir in frozen peas and cooked, cubed chicken.
- Layer 1 1/2 cups crushed potato chips in the bottom of a buttered casserole dish.
- Pour the chicken and rice mixture over the crushed chips in the casserole dish.
- Top with the remaining crushed potato chips.
- Bake at 325°F (160°C) for 35 minutes or until the chips are rich brown.
- Serve hot.
