Ingredients

  • 3 cups cooked, cubed chicken
  • 2 cups cooked rice
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1/2 cup celery, finely chopped
  • 1/4 cup chopped onion
  • 1 (10 oz.) package frozen peas
  • 3 cups potato chips, crushed

Instructions

  1. Mix cooked rice, cream of chicken soup, and milk in a bowl and set aside.
  2. Melt butter in a saucepan over low heat, then add finely chopped celery and chopped onion; cook until transparent.
  3. Remove from heat and stir in frozen peas and cooked, cubed chicken.
  4. Layer 1 1/2 cups crushed potato chips in the bottom of a buttered casserole dish.
  5. Pour the chicken and rice mixture over the crushed chips in the casserole dish.
  6. Top with the remaining crushed potato chips.
  7. Bake at 325°F (160°C) for 35 minutes or until the chips are rich brown.
  8. Serve hot.
