Ingredients

  • 1 head lettuce
  • 1 cucumber, chopped
  • 3 tomatoes, cut into tiny wedges
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint leaves
  • Dressing:
  • 1 clove garlic, chopped
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 2 small pitas or 1 large, toasted and torn into pieces

Instructions

  1. Add tomatoes, cucumber, dressing and pita just before serving.
