Fattoush is a vibrant Middle Eastern salad featuring fresh vegetables, crispy pita chips, and a tangy vinaigrette, perfect for a light, flavorful meal or side dish.

Ingredients

  • 3 medium tomatoes, cut in wedges
  • 3 pita breads
  • 4 c. romaine lettuce, cut into 1-inch strips
  • 2 c. sliced cucumber
  • 1/2 c. crumbled Feta cheese
  • 1/4 c. red onion, sliced and quartered
  • 3/4 c. vinaigrette salad dressing
  • 1 Tbsp. chopped flat leaf parsley
  • 2 tsp. dried mint leaves, crushed

Instructions

  1. Cut pita breads into halves.
  2. Cut each half into 8 wedges and place on a shallow baking pan.
  3. Bake until crisp, turning occasionally, about 25 minutes.
  4. Remove from pan and cool.
  5. In a large bowl, combine romaine lettuce, sliced cucumber, crumbled Feta cheese, sliced and quartered red onion, and tomato wedges.
  6. Mix vinaigrette salad dressing with chopped flat leaf parsley and crushed dried mint leaves.
  7. Pour the dressing mixture over the salad and toss to combine.
