Ingredients

  • 1 extra large Spanish onion or 3 large Bermuda onions
  • about 1 quart milk
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 2 eggs
  • 1 tablespoon vegetable oil

Instructions

  1. Peel onion; cut into 1/4-inch slices and separate into rings. Place rings in a large bowl.
  2. Cover with milk and refrigerate for 30 minutes.
  3. Drain on paper towels, reserving 2/3 cup of the milk used.
  4. Combine all-purpose flour and salt; stir well.
  5. Add eggs, the reserved milk, and 1 tablespoon of vegetable oil; beat until smooth.
