Favorite One-Egg Cake
A classic, moist vanilla cake with tender crumb, perfect for celebrations or everyday desserts, adaptable with fillings and frostings for all occasions.

- Preheat oven to 350°F.
- Grease well and flour two 8-inch x 1 1/2-inch layer cake pans or a 9-inch x 9-inch x 1 3/4-inch baking pan.
- Into a large bowl of electric mixer, sift together the cake flour, sugar, baking powder, and salt.
- Add the soft shortening and milk to the dry ingredients.
- At medium speed, beat for 2 minutes, occasionally scraping the sides of the bowl and guiding the mixture into the beaters with a rubber scraper.
- Add the egg and vanilla extract; beat for 2 minutes longer.
- Pour the batter into the prepared pans.
- Bake the layers for 25 to 30 minutes, or until the surface springs back when gently pressed with a fingertip. For a 9-inch square pan, bake for 30 to 35 minutes.
- Cool in the pans for 10 minutes, then remove from pans and cool thoroughly on wire racks.
- Fill and frost as desired.
