Ingredients

  • 2 cups sifted cake flour
  • 1 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/3 cup soft shortening
  • 1 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. Grease well and flour two 8-inch x 1 1/2-inch layer cake pans or a 9-inch x 9-inch x 1 3/4-inch baking pan.
  3. Into a large bowl of electric mixer, sift together the cake flour, sugar, baking powder, and salt.
  4. Add the soft shortening and milk to the dry ingredients.
  5. At medium speed, beat for 2 minutes, occasionally scraping the sides of the bowl and guiding the mixture into the beaters with a rubber scraper.
  6. Add the egg and vanilla extract; beat for 2 minutes longer.
  7. Pour the batter into the prepared pans.
  8. Bake the layers for 25 to 30 minutes, or until the surface springs back when gently pressed with a fingertip. For a 9-inch square pan, bake for 30 to 35 minutes.
  9. Cool in the pans for 10 minutes, then remove from pans and cool thoroughly on wire racks.
  10. Fill and frost as desired.
