A refreshing strawberry Jell-O salad with tomatoes and cottage cheese, offering a unique blend of sweet and savory flavors perfect for casual gatherings or light meals.

Ingredients

  • 1 (3 oz.) pkg. strawberry Jell-O
  • 1 can stewed tomatoes
  • 1/2 cup cottage cheese

Instructions

  1. Drain the stewed tomatoes and save the juice.
  2. Add water to the tomato juice to make 2 cups total.
  3. Heat 1 cup of the tomato juice to boiling.
  4. Stir in the strawberry Jell-O until dissolved.
  5. Allow the mixture to cool.
  6. Add the remaining cooled tomato juice when the gelatin is cool.
  7. Mix the drained tomatoes and cottage cheese together.
  8. Add the tomato and cottage cheese mixture to the gelatin.
  9. Combine thoroughly and chill before serving.
