Ladyfinger Cake

Ingredients

  • 4 pkg. ladyfingers
  • 2 pkg. (8 oz.) cream cheese
  • 1 (16 oz.) can crushed pineapple
  • 1 pt. heavy cream
  • 1 1/2 c. sugar
  • 1/4 tsp. vanilla

Instructions

  1. Line a 9 or 10-inch spring-form pan with ladyfingers, placing them in sheets without pulling them apart.
  2. Line the sides first and then fill in the large cracks on the bottom with remaining ladyfingers.
  3. In a mixing bowl, beat the cream cheese until smooth.
  4. Add sugar and vanilla, mix well.
  5. Fold in crushed pineapple.
  6. Whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the pineapple mixture.
  8. Pour the filling into the prepared ladyfinger-lined pan and smooth the top.
  9. Refrigerate for several hours or until set before serving.
