Ferris' Gooseberry Bread

Ingredients

  • 1 egg, beaten
  • 1/2 c. sugar
  • 2 Tbsp. melted butter
  • 1 c. gooseberry jelly
  • 2 c. sifted flour
  • 3 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 c. milk

Instructions

  1. Mix egg and sugar.
  2. Add melted butter; mix well.
  3. Add jam; mix. Sift flour, baking powder, baking soda and salt together.
  4. Add to the creamed mixture, alternating with the milk.
  5. Mix well.
  6. Bake in a well-greased bread pan (5 1/2 x 9-inch) at 350° for 1 hour.
  7. Turn bread out on wire rack to cool.
  8. This bread cuts best when allowed to stand several hours.
