  • 1 cup coarsely crushed cookie crumbs (chocolate, vanilla, graham crackers or gingersnaps)
  • raspberries
  • 3 quarts sherbet (orange, pineapple, raspberry), slightly softened
  • sliced kiwi fruit

Instructions

  1. Line a 6-cup loaf pan with plastic wrap, letting sides and ends extend above the pan.
  2. Sprinkle 1/3 cup cookie crumbs over the bottom of the prepared pan.
  3. Spoon 2 cups of sherbet into the pan and press into an even layer with the back of a spoon.
  4. Repeat the layering process twice more, using remaining cookie crumbs and sherbet.
  5. Fold plastic wrap tightly over the top of the terrine.
  6. Freeze for at least 6 hours or overnight.
  7. Unfold the plastic wrap on top of the terrine.
  8. Invert the terrine onto a serving plate and carefully remove the plastic wrap.
  9. Garnish with raspberries and sliced kiwi just before serving.
