Ingredients

  • fiddleheads, blanched and cooled
  • sliced carrots, blanched and cooled
  • 1 or 2 sliced red onions
  • sliced fresh mushrooms
  • sliced cucumbers

Instructions

  1. Blanch the carrots until fork tender and then cool.
  2. Combine the blanched fiddleheads, carrots, sliced red onions, sliced mushrooms, and sliced cucumbers in a large bowl.
  3. Add dressing to the mixture and toss together until well coated.
  4. Let the salad sit for 4 to 5 hours before serving to allow flavors to meld.
