Ingredients

  • 1 lb. cleaned fiddleheads
  • 3 large egg yolks
  • 1/4 c. hot water
  • 3 Tbsp. freshly squeezed lemon juice
  • 1/2 c. unsalted butter

Instructions

  1. Place egg yolks in the top of a double boiler over medium heat.
  2. Slowly add the hot water, whisking constantly until the yolks thicken.
  3. Remove from heat and whisk in the lemon juice.
  4. Slowly whisk in the melted butter.
  5. Place the double boiler back over very low heat while preparing the fiddleheads.
  6. Divide the cooked fiddleheads onto individual plates.
  7. Pour equal amounts of Hollandaise sauce over the fiddleheads and serve immediately.
