- Place egg yolks in the top of a double boiler over medium heat.
- Slowly add the hot water, whisking constantly until the yolks thicken.

- Place the double boiler back over very low heat while preparing the fiddleheads.
- Divide the cooked fiddleheads onto individual plates.
- Pour equal amounts of Hollandaise sauce over the fiddleheads and serve immediately.
