Ingredients

  • 2 cups small corn chips
  • 1 cup grated Cheddar cheese
  • 2 cups cooked chicken or turkey, cubed
  • 1 can cream of chicken soup
  • 1 (4 oz.) can diced green chiles
  • 2 medium tomatoes, diced
  • 1 cup sour cream
  • 1 cup guacamole (optional)

Instructions

  1. Place the small corn chips on the bottom of a glass casserole dish.
  2. Scatter the cooked chicken or turkey cubes on top of the chips.
  3. Mix the cream of chicken soup and diced green chiles together and pour over the chicken and chips.
  4. Top with diced tomatoes and sprinkle grated Cheddar cheese over the top.
  5. Bake at 350°F for 25 to 30 minutes until hot and bubbly.
  6. Garnish with sour cream and optional guacamole before serving.
