Ingredients

  • 11 1/2 or 12 oz. pkg. frozen fish portions
  • 1 cup small shell macaroni
  • 16 oz. can tomatoes, cut up
  • 1/2 cup chopped onion
  • 2 1/2 Tbsp. taco seasoning mix
  • 1 medium green pepper, cut into strips

Instructions

  1. Allow unwrapped frozen fish to stand at room temperature about 20 minutes.
  2. Cook macaroni according to package directions; drain thoroughly.
  3. In a medium saucepan, stir together undrained tomatoes, chopped onion, and taco seasoning mix.
  4. Add cooked macaroni and green pepper strips; bring the mixture just to boiling.
  5. Pour the tomato-macaroni mixture into a 10 x 6 x 2-inch baking dish.
  6. Fold each fish portion as necessary to fit the pan and place over the mixture.
  7. Spoon some of the sauce over the fish.
  8. Bake, covered, in a 350°F oven for 35 minutes or until the fish flakes easily when tested with a fork.
  9. Uncover; sprinkle cheese over the fish.
  10. Bake an additional 5 minutes or until the cheese melts.
