Filled Berlin Doughnuts

Ingredients

  • 1 pkg. active dry yeast
  • 1/4 c. warm water
  • 1/2 c. sugar
  • 1 tsp. salt
  • 1/3 c. butter
  • 1 Tbsp. orange juice
  • 2 tsp. rum extract
  • 1 c. milk, scalded
  • 3 1/2 to 4 c. all-purpose flour
  • 2 eggs, well beaten

Instructions

  1. Soften yeast in warm water.
  2. Put 1/2 cup sugar, salt, butter, orange juice and rum extract into a large bowl.
  3. Pour scalded milk over ingredients in bowl.
  4. Stir until butter is melted.
  5. Cool to lukewarm.
  6. Blend in 1 cup of the flour and beat until smooth.
  7. Stir in yeast.
  8. Add about half of the remaining flour and beat until smooth.
  9. Beat in eggs, then beat in enough of the remaining flour to make a soft dough.
