Ingredients

  • 2 Tbsp. butter, margarine or bacon drippings
  • 2 medium onions, sliced
  • 2 c. water
  • 2 medium potatoes, diced
  • 2 tsp. salt
  • 1/8 tsp. pepper
  • 12 oz. frozen fish fillets, defrosted and cut in 1-inch cubes
  • 3 c. milk

Instructions

  1. Melt butter, margarine, or bacon drippings in a large saucepan.
  2. Add sliced onions and cook until light yellow.
  3. Add water, diced potatoes, salt, and pepper; bring to a boil.
  4. Reduce heat and simmer until potatoes are slightly soft when tested with a fork.
  5. Add fish and simmer for 25 minutes.
  6. Add milk and heat, stirring occasionally.
  7. Serve in hot soup bowls with large, round crackers.
