Ingredients

  • 4 flounder fillets
  • 3 Tbsp. butter
  • 1/4 c. chopped onion
  • 1 small minced garlic clove
  • 1 (10 oz.) frozen chopped spinach
  • 1/2 c. bread crumbs
  • 1/2 tsp. tarragon
  • 1/4 tsp. thyme
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. white wine
  • 1 Tbsp. lemon juice

Instructions

  1. Rinse the fish fillets and pat them dry.
  2. Put 2 tablespoons of butter into a medium-sized dish and microwave for 30 seconds.
  3. Stir in the chopped onion and minced garlic, then microwave on high for 30 seconds.
  4. Add the frozen chopped spinach and microwave, covered with wax paper, for 5 minutes or until defrosted.
  5. Stir in the bread crumbs, tarragon, thyme, salt, and pepper to the spinach mixture.
  6. Spread even amounts of the mixture on each flounder fillet.
  7. Fold the thin half of each fillet over the spinach filling.
  8. Arrange the stuffed fish fillets in a greased baking dish.
  9. Melt 1 tablespoon of butter in the microwave, then add the white wine and lemon juice.
  10. Pour the wine and lemon mixture over the fish.
  11. Microwave the assembled dish for 10 minutes or until the fish flakes and is cooked through.
