Ingredients

  • fish fillets
  • 2 c. pancake mix
  • 2 1/2 c. club soda
  • buttermilk
  • lemon rind
  • flour

Instructions

  1. Soak fish fillets in buttermilk 2 to 3 hours with lemon rind on top.
  2. Drain. Mix pancake mix and club soda, then dip floured fillets

  6. and deep fry in 1 1/2 pints hot vegetable oil for about 4 minutes on each side.
