Ingredients

  • 2 lb. fresh whitefish
  • 2 Tbsp. oleo, softened
  • 1/2 c. chopped parsley
  • 1/2 c. chopped dill sprigs
  • 1/4 c. chopped chives
  • 1/4 c. chopped onion
  • 2 Tbsp. lemon juice

Instructions

  1. Preheat oven to 400°F.
  2. Clean and rinse the fish, then allow it to drain.
  3. Mix together oleo, parsley, dill, chives, onion, and lemon juice.
  4. Line a cookie sheet with foil.
  5. Lay the fish on the foil in a single layer.
  6. Spoon the herb mixture over each piece of fish.
  7. Cover with a second piece of foil and seal the edges.
  8. Bake for 20 minutes.
  9. Unwrap and transfer to a hot platter.
  10. Garnish with lemon slices and parsley if desired.
