Ingredients

  • 2 1/2 cups Minute rice
  • 1 teaspoon salt
  • 2 1/2 cups boiling water
  • 1 plus cup mayonnaise
  • 2 1/2 teaspoons lemon juice
  • 1 plus teaspoon curry powder
  • 1 cup chopped celery
  • 2 cans small shrimp

Instructions

  1. Add rice and salt to boiling water; stir to moisten all rice.
  2. Cover and remove from heat.
  3. Let stand 5 minutes, then uncover and let cool to room temperature.
  4. In a large bowl, combine cooked rice, mayonnaise, lemon juice, curry powder, chopped celery, and canned shrimp.
  5. Mix well to combine and serve chilled.
