A flavorful Louisiana-style jambalaya with sausage, shrimp, and aromatic vegetables, perfect for hearty meals and gatherings, blending spicy, savory, and smoky flavors.

Ingredients

  • 1 lb sausage link, sliced
  • 3 large onions, chopped
  • 2 garlic cloves, chopped
  • 1 green pepper, chopped
  • 1 1/2 cups celery, chopped
  • 3 tablespoons tomato paste
  • 16 oz can tomatoes
  • 1/2 teaspoon thyme
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 cups water
  • 1 cup rice
  • 2 lb shrimp
  • 1 to 2 bay leaves

Instructions

  1. Saute onions, green pepper, celery, garlic, and sliced sausage in a large pan. Pour off any drippings.
  2. Add canned tomatoes, tomato paste, thyme, bay leaf, salt, cayenne pepper, water, and rice. Stir well.
  3. Cook for 30 to 40 minutes, stirring occasionally.
  4. While the mixture is cooking, clean and devein the shrimp.
  5. Add the shrimp during the last 10 minutes of cooking.
  6. Adjust with more water and seasoning if needed before serving.
  7. Optional: Use chicken instead of, or with, shrimp.
  8. Serve hot, seasoned with creole seasoning to taste.
