Fish With Rice

Ingredients

  • 2 to 3 lb. fish (red, red snapper or trout)
  • 3 medium onions, chopped thin slices
  • 1/2 cup olive oil
  • 2 cups rice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 1 tablespoon comino seeds (ground or whole)
  • 3 cups water

Instructions

  1. Brown chopped thin-sliced onions in olive oil until a rich brown, then strain and set aside.
  2. Bring 3 cups of water to a boil and add the reserved onions and oil along with all seasonings: salt, black pepper, allspice, cinnamon, and ground comino seeds.
  3. Cut fish into pieces and drop into the seasoned water, then bring to a boil and reduce to medium fire, cooking for about 20 minutes.
  4. Remove fish from the seasoned water and allow to cool, then bone and flake the fish, ensuring it is well drained.
  5. Strain the water, bring it back to a boil, and add 2 cups of rice, adding more water if needed.
  6. Cook covered on medium to low fire until rice is nearly done; when almost finished, stir in half the oil used for frying onions.
  7. Fold the cooked rice gently to mix, then cover and turn off the heat to let it finish cooking.
  8. In a separate pan, brown pine nuts in butter, drain, and set aside.
  9. Spread the cooked rice on a serving platter.
  10. Distribute the flaked fish evenly over the rice and sprinkle toasted pine nuts over all. If pine nuts are unavailable, substitute with warmed walnuts (do not fry).
