A vibrant pasta-tuna salad combining spiral vegetable pasta, tuna, mixed vegetables, and olives, perfect for a quick, nutritious, and flavorful meal suitable for lunch or light dinner.

Ingredients

  • 4 cups vegetable pasta (spiral)
  • 2 cans white tuna (6 oz. each), drained
  • 4 tablespoons light mayonnaise
  • 2 cups mixed vegetables
  • 2 tablespoons salt
  • 1 tablespoon olive oil or butter
  • 1.5 tablespoons oregano
  • 0.5 cups sliced black olives or green (optional)

Instructions

  1. Put the pasta in boiling water and cook for 13 to 15 minutes, then drain and set aside.
  2. Put the olive oil or butter in a pan with the mixed vegetables and cook over low heat.
  3. Cover and let it simmer for 15 minutes; after 3 minutes, add 3 tablespoons of water and cover again.
  4. In a salad bowl, mix the mayonnaise, salt, and oregano with the drained tuna.
  5. Add the cooked pasta and vegetables to the salad bowl and mix well.
  6. Sprinkle sliced olives on top, if desired.
