Ingredients

  • 1/2 lb. spinach *
  • 1 bunch arugula *
  • 1/2 small head escarole *
  • 1 large head Boston (butter) lettuce *
  • 1 medium head radicchio *
  • 1/2 c. salad oil
  • 1/2 c. red wine vinegar
  • 3/4 tsp. thyme leaves
  • 1/8 tsp. coarsely ground pepper (black)
  • 3/4 lb. mushrooms, sliced
  • 2 green onions, sliced

Instructions

  1. About 30 minutes before serving, tear salad greens into bite sized pieces.
