Ingredients

  • 3 Tbsp. butter or oleo
  • 3/4 c. brown sugar, packed
  • 1/4 c. dark rum
  • 3 medium to large bananas, sliced
  • 2 Tbsp. brandy or rum

Instructions

  1. Put butter and brown sugar into an 8-inch skillet or chafing dish.
  2. Heat, stirring, until sugar and butter are combined. Add 1/4 cup dark rum.
  3. Slice bananas into the pan and simmer for 7 or 8 minutes.
  4. Heat 2 tablespoons of brandy or rum in a large spoon. Ignite and pour into the pan.
  5. Gently stir until the flame burns out. Serve immediately over hard-frozen vanilla ice cream.

Tips & Substitutions

For a richer flavor, consider using unsalted butter and a dark rum with caramel notes. You can substitute the dark rum with spiced rum or even a splash of apple juice for a non-alcoholic version. If bananas are too ripe, they may break apart during cooking, so aim for slightly firm bananas. Keep an eye on the flame when adding the brandy or rum to avoid flare-ups.

Serving Suggestions

Serve the flaming bananas over hard-frozen vanilla ice cream for a delightful contrast in temperature and texture. They also pair well with whipped cream or a sprinkle of chopped nuts for added crunch. For a complete dessert experience, consider serving alongside A Quick Dessert(Cherry) or Peggy'S Ginger Cookies for a flavorful combination.

Storage & Reheating

Flaming bananas are best enjoyed fresh, as the texture of the bananas can change when stored. If you have leftovers, let them cool completely and store in an airtight container in the refrigerator for up to 2 days. To reheat, gently warm them in a skillet over low heat, stirring occasionally until warmed through, but be cautious to not overcook.

Frequently Asked Questions

Can I use different types of alcohol in this recipe?

Yes, you can experiment with different spirits! If you want to avoid rum, brandy works wonderfully, and even whiskey can add a unique depth. Just remember to adjust the quantity based on your taste preference, as some spirits may have stronger flavors than others.

What type of bananas are best for this dish?

Choose medium to large, slightly firm bananas for the best results. Varieties such as Cavendish are ideal due to their sweetness and texture. Avoid overly ripe bananas, as they may become mushy during cooking and lose their shape.

Is it safe to ignite the alcohol in the pan?

Yes, it is generally safe if done carefully. Ensure you are at a safe distance when igniting the alcohol, and use a long-handled spoon to pour the flaming liquid into the pan. Always have a lid nearby to smother the flames if needed.
