Ingredients

  • lemon peel
  • garlic
  • peppercorns
  • thyme
  • small red peppers
  • small green peppers

Instructions

  1. Peel lemon from top to bottom in 3/4-inch strips, using only the yellow part and trimming out all of the white pith.
  2. Peel garlic cloves.
  3. Combine lemon peel, garlic, peppercorns, thyme, and small red and green peppers in a clean jar.
  4. Pour extra virgin olive oil over the ingredients until fully submerged.
  5. Seal the jar and let it sit for at least 24 hours to allow flavors to infuse.
