- Combine rice vinegar, olive oil, dried dill weed, and minced garlic in a medium bowl, stirring well with a wire whisk.
- Set the mixture aside.
- Trim large leaves from the broccoli and remove flowerets for another use.
- Remove tough ends of the lower broccoli stalks and discard.
- Wash the remaining stalks and cut them diagonally into 1/2-inch slices.
- Add 2 cups of broccoli slices to the vinegar mixture and toss gently to coat.
- Reserve any remaining slices for another use.
- Cover the coated broccoli slices and chill for 3 hours.
