Marinated Broccoli Chunks

A vibrant, tangy marinated broccoli dish with fresh dill and garlic, perfect as a crunchy side or healthy snack for any occasion.

Ingredients

  • 1 Tbsp. rice vinegar
  • 1 Tbsp. olive oil
  • 1/4 tsp. dried dill weed
  • 1 clove garlic, minced
  • 2 lb. fresh broccoli
  • red cabbage leaves
  • fresh dill sprig (optional)
  • pimiento strips

Instructions

  1. Combine rice vinegar, olive oil, dried dill weed, and minced garlic in a medium bowl, stirring well with a wire whisk.
  2. Set the mixture aside.
  3. Trim large leaves from the broccoli and remove flowerets for another use.
  4. Remove tough ends of the lower broccoli stalks and discard.
  5. Wash the remaining stalks and cut them diagonally into 1/2-inch slices.
  6. Add 2 cups of broccoli slices to the vinegar mixture and toss gently to coat.
  7. Reserve any remaining slices for another use.
  8. Cover the coated broccoli slices and chill for 3 hours.
