Ingredients

  • 2 15 oz. cans chickpeas
  • 4 medium cloves minced garlic
  • 2 tsp. cumin
  • 1 tsp. turmeric
  • 1 tsp. salt
  • 1/2 cup finely minced onion or 6 scallions
  • 1/2 cup minced parsley
  • 1/4 cup water
  • 1 Tbsp. lemon juice
  • 1/3 cup flour
  • a few dashes cayenne
  • oil for frying

Instructions

  1. Rinse chickpeas and drain.
  2. Combine all ingredients besides flour in a food processor or bowl.
  3. Mash to a uniform batter.
  4. Add flour and stir thoroughly.
  5. Form the mixture into small balls or patties.
  6. Heat oil in a frying pan over medium heat.
  7. Fry the falafel until golden brown on all sides, about 3-4 minutes per batch.
  8. Drain on paper towels and serve warm.
