Ingredients

  • 3 egg yolks
  • 1/3 cup sugar
  • 1/4 cup lime juice
  • 1 1/2 teaspoons grated lime rind
  • 1 1/2 cups heavy cream
  • Green food coloring
  • 9-inch graham cracker crust

Instructions

  1. In the top part of a double boiler, mix egg yolks, sugar, and lime juice.
  2. Cook over boiling water, stirring until thickened.
  3. Add grated lime rind and stir well.
  4. Chill until the mixture is thickened but not firm.
  5. Whip 1 cup of heavy cream until soft peaks form.
  6. Fold the whipped cream into the lime mixture.
  7. Add a few drops of green food coloring and mix until evenly colored.
  8. Pile the mixture into the graham cracker crust.
  9. Chill the pie for about 24 hours before serving.
