- Whip the egg whites until stiff peaks form, gradually adding 1/4 cup sugar.
- Beat the egg yolks with the juice of 2 lemons until well combined.
- Add 3/4 cup sugar, a pinch of salt, and grated lemon rind to the yolk mixture.
- Fold the whipped egg whites into the yolk mixture gently.
- Spread 1 cup of graham cracker crumbs in the bottom of a 9 x 13-inch Pyrex dish.
- Pour the lemon and egg mixture over the graham cracker crust.
- Sprinkle the remaining 1 cup of graham cracker crumbs on top.
- Add the chilled evaporated milk and lemon juice, mixing gently if needed.
- Freeze until firm, about 4 hours or overnight.
- Optional: Top with whipped cream or cherries before serving.
