Ingredients

  • 2 eggs, separated
  • 1 tall can evaporated milk, chilled
  • juice of 3 lemons
  • grated rind of 1 lemon
  • 1 cup sugar
  • 2 cups graham crackers

Instructions

  1. Whip the egg whites until stiff peaks form, gradually adding 1/4 cup sugar.
  2. Beat the egg yolks with the juice of 2 lemons until well combined.
  3. Add 3/4 cup sugar, a pinch of salt, and grated lemon rind to the yolk mixture.
  4. Fold the whipped egg whites into the yolk mixture gently.
  5. Spread 1 cup of graham cracker crumbs in the bottom of a 9 x 13-inch Pyrex dish.
  6. Pour the lemon and egg mixture over the graham cracker crust.
  7. Sprinkle the remaining 1 cup of graham cracker crumbs on top.
  8. Add the chilled evaporated milk and lemon juice, mixing gently if needed.
  9. Freeze until firm, about 4 hours or overnight.
  10. Optional: Top with whipped cream or cherries before serving.
