Florida Orange Bread

Ingredients

  • 3/4 c. orange rind, slivered
  • 1 1/2 c. sugar
  • 1/3 c. water
  • 3 Tbsp. butter
  • 1 1/2 c. orange juice
  • 3 eggs, well beaten
  • 4 c. flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 2 tsp. salt

Instructions

  1. Remove orange rind from oranges and cut into slivers.
  2. Combine sugar and water with rind in pan.
  3. Stir until sugar dissolves. Cook for 5 minutes.
  4. Mixture should measure 1 1/2 cups.
  5. Add butter and stir until melted.
  6. Add orange juice and eggs.
  7. Mix dry ingredients with orange juice mixture in a large bowl.
  8. Batter will be lumpy.
  9. Bake in greased loaf pan 1 hour and 15 minutes at 325° or in 4 small pans 45 minutes.
