Ingredients

  • 6 c. fresh spinach
  • 3 c. orange sections
  • 1/2 c. cashew nuts
  • 3/4 c. blue cheese
  • 1/2 c. salad oil
  • 1/4 c. grapefruit juice
  • 1/2 tsp. seasoned salt
  • 1 c. sour cream

Instructions

  1. In an electric blender or using an electric mixer in a small bowl, combine blue cheese, salad oil, grapefruit juice, and seasoned salt; cover.
  2. Blend until smooth or mix until well combined.
  3. Stir in sour cream.
  4. Cover and chill for at least 1 hour to blend flavors.
  5. Just before serving, combine spinach, orange sections, and cashew nuts with the dressing.
  6. Serve immediately.
