Ingredients

  • 1 can crushed pineapple
  • 1 package Jell-O (gelatin)
  • Cottage cheese
  • Peaches (fresh or canned, drained and chopped)

Instructions

  1. Combine crushed pineapple (do not drain) and Jell-O in a saucepan.
  2. Bring to a boil.
  3. Cook for 2 1/2 minutes, stirring constantly.
  4. Cool the mixture.
  5. In a large mixing bowl, combine the cooled mixture, cottage cheese, drained and chopped peaches, and Cool Whip.
  6. Refrigerate until the salad is firm.
  7. Optional: Add nuts before serving.
