Ingredients

  • 2 cans (1 lb. 3 oz.) yams
  • 2 cups sugar
  • 1 can (6 oz.) frozen orange juice
  • 1 teaspoon salt
  • 4 eggs
  • 6 tablespoons butter
  • 1 teaspoon cinnamon
  • 1 cup coconut
  • 1 cup mini marshmallows

Instructions

  1. Drain and mash the yams in a large bowl.
  2. Add the sugar, frozen orange juice, salt, beaten eggs, melted butter, cinnamon, and coconut to the mashed yams and mix well.
  3. Pour the mixture into a large casserole dish.
  4. Bake at 350°F (175°C) for 50 minutes.
  5. Remove from oven, top with mini marshmallows, and bake an additional 10 minutes until marshmallows are golden.
