Ingredients

  • 1 envelope yeast
  • 1 1/2 cups warm water
  • pinch of sugar
  • 2 teaspoons coarse or kosher salt
  • 4 tablespoons olive oil
  • 4 cups flour
  • 2 teaspoons minced fresh rosemary or thyme or a combination

Instructions

  1. In a 1-cup measure, combine yeast, 1/4 cup warm water, and the sugar.
  2. Stir and let stand for 5 minutes.
  3. Transfer to a bowl with remaining 1 1/4 cups warm water, 1 1/2 teaspoons salt, and 2 tablespoons olive oil.
  4. Add 2 cups of flour and stir until smooth.
  5. Gradually add 1 more cup of flour and herbs, stirring until well combined.
  6. On a floured surface, knead dough until smooth and elastic, at least 10 minutes, adding remaining 1 cup of flour as needed.
  7. Place the dough in an oiled bowl.
  8. Cover and let rise until doubled.
