Ingredients

  • 4 to 5 whole chicken breasts
  • Italian bread crumbs
  • 1 pkg. mushrooms, cleaned and sliced
  • 8 oz. grated Monterey Jack cheese
  • 2 beaten eggs
  • 8 oz. chicken stock

Instructions

  1. Clean the chicken breasts and cut them into 1 1/2-inch pieces.
  2. Place the chicken pieces in beaten eggs and refrigerate for at least 4 hours or overnight.
  3. Coat the chicken pieces in Italian bread crumbs.
  4. Brown the chicken in melted margarine.
  5. Layer the browned chicken in a baking dish.
  6. Sprinkle grated Monterey Jack cheese and sliced mushrooms over the chicken layer.
  7. Repeat the layering process.
  8. Pour chicken stock over the layered ingredients.
  9. Cover the dish with foil.
  10. Bake at 350°F for 1 to 1 1/2 hours.
