Ingredients

  • 4 jumbo carrots
  • 1/2 large yellow sweet onion
  • 2 Tbsp butter or margarine
  • 1 Tbsp orange flower water or orange juice
  • 1/4 tsp vanilla
  • 1/4 cup skim evaporated milk
  • 1 Tbsp light brown sugar
  • salt to taste

Instructions

  1. Scrape the carrots and slice them thinly.
  2. Peel the onion and slice it thinly.
  3. Combine the sliced carrots and onion in a saucepan and add just enough water to cover.
  4. Bring to a boil, cover, and cook until the vegetables are very soft.
  5. Drain the water from the vegetables and place them in a food processor or blender.
  6. Add butter or margarine, orange flower water or orange juice, vanilla, skim evaporated milk, light brown sugar, salt, and pepper.
  7. Puree until smooth and serve.
