Grilled Parmesan Tomatoes

Juicy, ripe tomatoes are broiled with garlic, parsley, and Parmesan for a flavorful, cheesy side perfect for summer gatherings or light meals.

Ingredients

  • 4 tsp. olive oil
  • 4 medium ripe tomatoes, cored and sliced 1/2-inch thick
  • 1 clove minced garlic
  • 2 Tbsp. fresh parsley
  • 1/8 tsp. pepper
  • grated Parmesan cheese

Instructions

  1. Preheat the broiler.
  2. Grease a baking sheet with 1 teaspoon of olive oil and place the tomato slices in a single layer.
  3. In a small bowl, mix remaining olive oil, minced garlic, parsley, and pepper.
  4. Drizzle the mixture over the tomato slices and sprinkle with grated Parmesan cheese.
  5. Broil 5 inches from the heat for about 3 minutes or until the cheese is golden brown.
