Ingredients

  • 4 cups yellow squash slices, 1/4 inch
  • 4 cups zucchini slices, 1/4 inch
  • 3 slices bacon, diced
  • 1/2 cup slivered red onion
  • 1 can (10 3/4 oz.) cream of celery soup
  • 1/4 cup finely diced red bell pepper or pimiento
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Bring 2 quarts of water to a boil in a medium saucepan.
  3. Add squash and zucchini slices to the boiling water.
  4. Cook for 3 to 4 minutes or until almost crisp-tender.
  5. Drain the vegetables.
  6. In a 10-inch skillet, cook diced bacon until crisp.
  7. Remove bacon with a slotted spoon and set aside.
  8. Add slivered red onion to the bacon drippings in the skillet.
  9. Cook and stir over medium heat for 2 minutes, then drain off the drippings.
  10. Add the reserved bacon, cream of celery soup, red bell pepper or pimiento, salt, and pepper to the skillet.
  11. Mix well and remove from heat.
  12. Fold in the drained vegetables into the mixture.
  13. Transfer the mixture to a 2-quart baking dish.
  14. Cover the dish with foil and bake for 30 minutes.
  15. Remove foil, sprinkle with cheese, and place under the broiler until lightly browned if desired.
