  3. Cook the beef until it is dark brown.
  4. Place the meat and bacon in a casserole.
  5. Add bay leaves, thyme, salt, and pepper, then add enough red wine to cover the ingredients.
  6. Bake, covered, at 300°F (150°C) for 1.5 hours.
  7. Brown the pearl onions and mushrooms in a little bacon grease.
  8. Add them to the meat mixture.
  9. Bake, covered, for an additional 30 minutes.
  10. Add more wine if needed during baking.
  11. Serve with rice.
