Creamy beef stroganoff features tender sirloin strips in a rich mushroom and sour cream sauce, perfect for comforting dinners and pairing well with noodles or rice.

Ingredients

  • 1 Tbsp. flour
  • 1/2 tsp. salt
  • 1 lb. sirloin tip, cut in strips
  • 2 Tbsp. butter
  • 12 oz. fresh mushrooms
  • 1/2 c. chopped onion
  • 1 clove minced garlic
  • 3 Tbsp. flour
  • 1 Tbsp. tomato paste
  • 1 (10 1/2 oz.) can beef broth
  • 1 c. sour cream
  • 1 c. sour cream

Instructions

  1. Combine 1 tablespoon flour and 1/2 teaspoon salt.
  2. Coat the sirloin tip strips with the flour mixture.
  3. Melt 2 tablespoons butter in a skillet over medium heat.
  4. Add the coated meat and brown quickly on all sides.
  5. Add the mushrooms, chopped onion, and minced garlic to the skillet.
  6. Cook for 3 to 4 minutes until vegetables are tender.
  7. Remove the meat and mushrooms from the skillet and set aside.
  8. Add 2 tablespoons butter to the skillet drippings.
  9. Blend in 3 tablespoons flour to make a roux.
  10. Stir in 1 tablespoon tomato paste.
  11. Gradually add the beef broth while stirring until the sauce thickens and bubbles.
  12. Return the meat and mushrooms to the skillet and stir to combine.
  13. Remove from heat and stir in sour cream.
  14. Heat gently until hot, but do not boil.
  15. Serve over cooked noodles.
