- Combine 1 tablespoon flour and 1/2 teaspoon salt.
- Coat the sirloin tip strips with the flour mixture.
- Melt 2 tablespoons butter in a skillet over medium heat.
- Add the coated meat and brown quickly on all sides.
- Add the mushrooms, chopped onion, and minced garlic to the skillet.
- Cook for 3 to 4 minutes until vegetables are tender.
- Remove the meat and mushrooms from the skillet and set aside.
- Add 2 tablespoons butter to the skillet drippings.
- Blend in 3 tablespoons flour to make a roux.
- Stir in 1 tablespoon tomato paste.
- Gradually add the beef broth while stirring until the sauce thickens and bubbles.
- Return the meat and mushrooms to the skillet and stir to combine.
- Remove from heat and stir in sour cream.
- Heat gently until hot, but do not boil.
- Serve over cooked noodles.
