Ingredients

  • 1 lb bacon
  • 1 package frozen French fries
  • 1 teaspoon salt
  • 12 eggs

Instructions

  1. In an electric skillet, fry 10 slices of bacon until crispy.
  2. Remove bacon and drain on paper towels.
  3. Pour about 4 tablespoons of bacon grease into the skillet.
  4. Place frozen French fries in the skillet and brown them.
  5. Sprinkle salt and pepper to taste over the fries.
  6. Cover the pan and cook over low heat until fries are browned.
  7. In a bowl, beat 1 dozen eggs and pour over the browned fries in the skillet.
  8. Reduce heat and cover. Cook for 3 minutes.
  9. Add cooked bacon and cheese on top.
  10. Continue cooking for 5 to 10 minutes, until eggs are set.
  11. Cut into squares and serve.
