Ingredients

  • 10 medium potatoes
  • 1 1/2 to 2 loaves dried bread
  • 3 to 4 medium onions
  • 1 package giblets (extra)
  • 2 lb butter
  • Sage to taste

Instructions

  1. Peel and dice the onions.
  2. Fry the onions in 2 pounds of butter until golden brown.
  3. Pour off and mash the boiled potatoes.
  4. Soak dried bread in potato water or giblet broth until soft.
  5. Add ground giblets to the mixture.
  6. Mix the soaked dried bread, mashed potatoes, and giblets together.
  7. Add salt, pepper, and sage to taste.
  8. Melt 1/4 pound of butter and mix it into the stuffing while hot.
  9. Allow the mixture to cool slightly.
  10. Stuff the poultry with the dressing.
  11. Place any leftover dressing in a dish and bake during the last hour of the bird's cooking, mixing with the drippings.
