Ingredients

  • 3/4 cup all-purpose flour
  • 3 tablespoons sugar
  • 1/4 teaspoon salt
  • 3 eggs
  • 3/4 cup milk
  • 2 tablespoons melted butter
  • 2 cooking apples, quartered and thin sliced
  • 2 tablespoons melted butter

Instructions

  1. Spray a 10-inch cast-iron skillet with cooking spray and heat on medium heat.
  2. Mix together the flour, sugar, salt, eggs, milk, and 1 teaspoon of melted butter until well combined.
  3. Pour the batter into the heated skillet.
  4. Arrange the thinly sliced apples on top of the batter, covering it completely in an attractive pattern.
  5. Mix brown sugar and cinnamon, then sprinkle over the apple slices.
  6. Drizzle 1 tablespoon of melted butter on top.
  7. Bake in a 400°F oven for 15 to 20 minutes or until the pancake puffs up and is cooked through.
  8. Cut into wedges and serve while warm.
