- Slit the peppers and remove the membrane and seeds.
- Cut the cheese into strips and insert into each chile.
- Set aside the stuffed chilies.
- Beat egg whites until very stiff.
- Beat egg yolks until well blended, then fold into the egg whites. Next, fold in the flour.
- Dip each stuffed chili into the batter, one at a time.
- Lift out with a spoon and transfer into hot oil about 1 1/2 inches deep.
- Fry until golden brown.
- Drain on absorbent paper.
