Ingredients

  • 1 cup sugar
  • 3 heaping tablespoons cornstarch
  • 1 3/4 cups water
  • dash of salt
  • 2 egg yolks
  • 1/4 cup fresh lemon juice
  • 1/4 cup white sugar

Instructions

  1. In a saucepan, cook the sugar, cornstarch, water, and a dash of salt over medium heat until thickened.
  2. Beat the egg yolks, adding 1/4 cup sugar, then gradually pour some of the hot mixture into the egg mixture to temper the eggs.
  3. Pour the egg mixture back into the saucepan and cook until it thickens further.
  4. Add the lemon juice to the mixture and stir well.
  5. When the filling is thick enough for the pie crust, remove from heat and stir in 1 tablespoon butter and 1/2 teaspoon vanilla extract.
