Fresh Mango Salad
Ingredients
- 3 cups mangoes, chopped
- 2 tomatoes, chopped ⓘ
- 12 red onion, chopped ⓘ
- 2 cucumbers, chopped (seed if you want) ⓘ
- 1 12 cups corn, fresh best ⓘ
- 12 cup basil, fresh shredded
- 12 cup olive oil ⓘ
- 14 cup rice vinegar ⓘ
- 2 tablespoons lime juice ⓘ
- 1 teaspoon garlic, chopped ⓘ
- 12 teaspoon salt ⓘ
- 12 teaspoon pepper ⓘ
- 1 bunch watercress, torn ⓘ
Instructions
- Combine all but watercress and lettuce in a large bowl, tossing to coat all.
- Cover and chill 2 hours.
- Serve over watercress and lettuce.
