Ingredients

  • 1 fresh ripe Dole pineapple
  • 1 cup low-fat milk
  • 1/4 cup instant vanilla pudding mix
  • 6 tablespoons chopped nuts
  • 3 tablespoons shredded coconut

Instructions

  1. Twist the crown from the pineapple.
  2. Cut the pineapple lengthwise into quarters.
  3. Remove the fruit from the shell and core.
  4. Cut the pineapple into chunks.
  5. Divide the pineapple chunks into 8 serving glasses.
  6. Place the milk and pudding mix into a blender.
  7. Process for 40 seconds or until well blended, then transfer to a large bowl.
  8. Chill the pudding mixture for 10 minutes.
  9. Spoon the pudding over the pineapple chunks.
  10. Sprinkle with chopped nuts and shredded coconut.
