Ingredients

  • 1 tsp EVOO
  • 1 small onion chopped
  • 1 garlic clove minced
  • 3/4 cup uncooked pearl barley
  • 1 3/4 cup chicken broth
  • 1 chopped zucchini
  • 1 1/2 cups halved cherry tomatoes
  • 1/4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 2 tblsp crumbled feta cheese

Instructions

  1. Heat oil in large dsucepan over medium-high heat, add nion and garlic and saute 2 minutes. Add barley cook 1 minute. Stir in chicken borth and bring to a boil. Cover, reduce heat, and simmer 30 minutes. Stir in zucchini, tomatoes, salt and pepper; cover and cook 5 minutes. Put 1 cup of barley into each of 4 bowls, top each with 1 1/2 tsp of feta cheese.
